7 easy recipes to celebrate Halloween in your shop!

Halloween is coming soon! Want to stand out from the competition and impress your customers with Halloween products? Make your customers shiver with our mini Phantom muffins made from our Nature Mini Muffins Tulip with caramel sprinkles.

Ingredients :
Nature Mini Muffins Tulip with caramel sprinkles (ref. 2353)
Cream mousseline
Blue liquid colorant (available from Cerf Dellier or your usual wholesaler)
Phantom meringue (see tutorial below)

Step 1: Cut the excess tulip paper from the Muffin to the desired level
Step 2: Mix a few drops of the blue liquid colorant with your muslin cream or royal ice cream.
Step 3: With a fluted socket, whip your coloured muslin cream onto the plain mini muffins.
Step 4: Finally add the little ghost meringue on top.

Ingredients :
French meringue
500 g icing sugar for 8 egg whites
Ganache

Step 1: Mount the 1.5 cm diameter meringues
Step 2: Bake at 100°C for 120 minutes then let cool
Step 3: Make the eyes with the ganache

Ingredients :
Mini Muffins Chocolate Tulip and Chocolate Chips (ref. 2353)
Mousseline cream (half pastry cream (ref. 1626) half butter cream (ready-to-use product available from your usual wholesaler)
Red liquid colorant (available from Cerf Dellier or your usual wholesaler)
Black sugar paste (available at Cerf Dellier or your usual wholesaler)

Step 1: Cut off the excess tulip paper from the Muffin to the desired level.
Step 2: Mix a few drops of the red liquid colorant with your muslin cream.
Step 3: With a plain socket diameter 14, whip your mousseline cream on the chocolate mini muffins.
Step 4: Before setting, add the small horns made with the black sugar paste.


Pumpkin is the emblematic seasonal vegetable for Halloween. So when our mini tulip muffins with caramel nuggets are adorned with small pumpkins make with sugar paste, we can only melt completely!

Ingredients :
Nature Mini Muffins Tulip with caramel chips (ref. 2353)
Chiffon cream
Pumpkins in sugar paste (see tuto below)

Step 1: Cut the excess tulip paper from the Muffin to the desired level
Step 2: With a small grooved socket, place your mousseline cream on the plain mini muffins.
Step 3: Finally add the small sugar paste pumpkins on top.

Ingredients :
Orange sugar paste (available at Cerf Dellier or your usual wholesaler)
Green sugar paste (available at Cerf Dellier or your usual wholesaler)

Step 1: With orange sugar paste, make a sausage and cut 1.5cm pieces.
Step 2: Make small balls in your hands and then make a well in the center of the ball
Step 3: With the tip of a knife, trace the folds of the pumpkin and set aside.
Step 4: With green sugar paste, make a thin pudding and cut 0.5cm pieces.
Step 5: Shape the sugar paste to make it look like a stem and place it in the center of the ball.

Ivory ice-cream paste (ready-to-use product available from your usual wholesaler)

Smarties®

Step 1: Mix a few drops of the orange food colouring with your ivory glaze dough.
Step 2: Dip the Nutella® cookie into the coloured ice cream
Step 3: Before setting, add coloured Smarties® to the icing

Ingredients :
Sweet mini donuts (ref. 2351)
Ivory ice-cream paste (ready-to-use product available from your usual wholesaler)
Orange liquid dye (available from Cerf Dellier or your usual wholesaler)
Royal ice cream

Step 1: Dip one side of the mini donut in the ivory ice cream dough previously colored
Step 2: Once the ice cream has set, draw your spider web with a pocket of royal ice cream with a plain socket diameter 4.
You can also make the spider's web with a chocolate ganache.

Ingredients :
Nantes shortbread (ref. 4062)
Halloween cookie cutters (available at Cerf Dellier or your usual wholesaler)
Ganache

Step 1: Preheat the oven to 180°C
Step 2: Cut the shortbreads with a ghost shaped cookie cutter or other Halloween shape and bake for 15 minutes
Step 3: In the meantime, prepare your chocolate ganache
Step 4: Remove the shortbread from the oven and let it cool, then make the eyes with the ganache


Monstrously greedy, our spider web shortbreads guarantee a delicious, inexpensive and easy to make dessert with our Nantes shortbread.

Step 3: To finish with the tip of a knife, draw lines from the centre to the outside to form the spider web
